Here’s a twist on the basic cabbage and salt recipe using apples and a daikon radish or two. The cabbage soaks up some of the sweet, tart flavor of the apples leaving a salty, sour, sweet fresh crunch that really rocks the palate!
The waning gardening chores and the rapidly ripening veggies has me in full “put ‘em up” mode. Several found recipes later and we have pickles and relish... oh yeah. This short and (very) easy list can all be done in one day.
Over the years I’ve tried several corning formulas, from Julia Child's corned pork, to old-time pioneer type corns, to most recently Michael Ruhlman’s excellent corned beef recipe. All were darn good. Here's my adaptation with a little extra spice.
